Good morning fellow Paleo dieters,
So here I am today on day four with coffee. Kaci, it seems I took your advice inadvertently and have been drinking hot tea every morning. I have been getting headaches every afternoon which Patti pointed out to me yesterday was most likely caffeine withdrawal headaches. I can live with that. We are heading over now to do some hot yoga this morning so I don't buckle and visit my favorite coffee shoppe.
I love Kaci's idea about trying new vegetables and sharing our experiences. Last summer I joined a CSA and got some items that I had no idea what to do with. It was a fun trying to figure out what to do with them. I never quite figured out garlic scapes.
For the most part things are going good and I do believe that the elimination of dairy has made some changes.
Lately I have taken some time trying to make everyday comfort foods into paleo comfort foods and my paleo shepherd's pie was definitely a hit. Give it a try and let me know what you think.
1 lb grass fed ground beef (season it up the way you like it)
2 large sweet potatoes (I like to use the orange flesh for this recipe)
2 cups of mixed veggies, your choice (broccoli, cauliflower or be creative), diced small
1 TBS coconut butter
optional seasonings: salt, pepper, chipotle (added to potatoes, but be careful, a little goes a long way.
Preheat oven to 350 degrees. Peel and chop sweet potatoes and boil until fork tender. While potatoes are cooking, brown the ground beef and steam the veggies until crisp tender. Drain potatoes when tender, add coconut butter and any desired seasonings and coarsely mash. In a oven safe casserole dish, layer on bottom the browned ground beef, then the steamed chopped veggies, top with the mashed sweet potatoes. Bake 30 minutes or until potatoes start to brown. Enjoy!
Serves 4 or 2 with leftovers for lunch tomorrow!!

ReplyDeleteI made The Spanish Tortilla recipe for breakfast after workout this morning. It was really good, fast and easy. My hubby even liked it, he had seconds! We made bedtime blueberries the other night. That was also really good. My daughter Tori even liked it.
I'm going to make the Chicken Jicama Slaw today. Can't decide if I want to put the chicken in it or just make it a slaw. I do have a bunch of chicken cooked in the fridge waiting for soup.
Definately going to make the Sausage N' Cabbage with fried apples. I have about 10 recipes printed out I want to try!
Kaci... please post your energy bar recipe. I'd love to see if I can get my daughter to eat it.
Mary...how did you like the CSA? I was just looking at some local ones online last night and was talking to my husband about them. Also, the caffine headaches will go away. I was a mess for a couple of days then all was well. I only do decaf coffee and tea now. Luckily I never liked anything in my coffee or tea so giving up dairy wasn't an issue. I hate milk and can live without cheese and yogurt.
Greg...as you get better at buying groceries and finding out your favorite veggies and meals this will get easier and easier. You'll learn to make big batches of food for more then one meal. Start thinking outside the box. Left over dinner makes a great breakfast. My kindergarten kids think I'm crazy because I eat veggies for breakfast!
Renee, where is this Chicken Jicama Slaw recipe you speak of? That sounds delish. I am going to make pork roast and sauerkraut tomorrow to start off the week.
ReplyDeleteI loved being a part of the CSA. I had fresh veg every week and so much to experiment with but you have to take the good with the bad and know that some things you will get too much of but I think it depends really on your CSA's assortment. Last year was a bad growing year so we didn't get as much as expected but it's a chance you take.
Kaci - I would also love to have you energy bar recipe. I would rather make them myself than buy them!
I am now working on my meal list for the week. I try to cook a bunch of food on Sundays for at least the first few days meals. It works out great providing I have the time to get it done!
BTW, hot yoga is damn hot.

I just realized I said "day four with coffee". Ha! I guess you guys figured out I meant "without" and in addition it was actually day five. This is why I NEED coffee...
ReplyDeleteThe chicken jicama slaw is on Everyday Paleo. I don't know how to make it a link. I preordered her book today. I made the slaw for lunch and it was good! Even made my own mayonaise...Grandma would be so proud! I think it'll even be better tomorrow when all the flavors blend together. I did add a few nuts and raisins. Thanks for the CSA info. I really think I'd like to try one this year.
