Checking In...

Hey,so how is everyone doing on their Paleo Challenge?
I just realized that tomorrow, I will be half way through (day 15) and can't believe how fast it has gone by. This is my second time doing a 30 Day Paleo Challenge. It seemed fairly easy to me the first time around, but this time seems even easier. One thing I am noticing myself doing this time is rather than focusing on the foods I "can't have", I am focusing on all the wonderful foods that I can have and many new foods and recipes that I've never had before. It's like exploring a whole new world. The other thing I am noticing is a huge improvement in my running (I think Kaci can attest to that). The first time I did the 30 Day challenge, my knee pain from arthritis improved immensely, but I didn't really notice any performance gains. Today, I am happy to say that we ran 6 miles at an average pace of 8:18 min/mile. My average for that distance has historically been around 8:45 to 9 minute miles. I truly believe that sticking to a Paleo Diet has been the key factor in this gain. Not only am I running faster, but my recovery has been amazing! I don't have all the aches and pains in my legs anymore that I was having before after running. It has been great!

So how are all of you doing?
Anyone notice anything positive? Negative?
Anyone try a recipe with a new vegetable yet?

  1. My intentions were to get on here to rave about the sausage and cabbage noodle recipe which I made tonight so I will. To be honest, I only tried this recipe after Patti recommended it since it didn't really grab me but it turned out to be absolutely great! Thank you Patti to putting it in the spotlight.

Cutting out dairy has made a significant change in just the little over a week I have been without. It is amazing how much better I feel. Since paleo'ing, my knee pain has been diminishing, even more so with the elimination of dairy. Being able to do my training runs for the Shamrock without knee pain has been a relief and I am beating PR's.

  3. Great news Patti, I think my knees are less sore as time goes on and my post work out muscle pain is less as well. Yesterday we did dips and I normally am challenged getting more than 4-5 at a time. But yesterday I was able to get 10 then rest so I was happy to see that improvement.

Paige ( my 12 year old daughter)made the waffles last night while Brad and I were B ball practice. The batter turned out more like cookie dough! We were still able to put them on the waffle iron and then eat them. They did taste pretty good. What do ya'll think did we miss something or is that what they are supposed to look like? So far so good It has been fun to cook with Paige and she says she is feeling better and does not miss the junk food "too much"
