I am so happy to have Greg and Mary joining in on the 30 Day Paleo challenge. I can't wait to hear how it is going for everyone. Anyone else who wants to join in, just leave a comment with your name and start date so we can cheer you on! I believe Renee is doing it too, which shouldn't be hard for her since she pretty much eats Paleo all the time and has just made it her way of life. I am on day 6 now and still feeling great. Good early morning run with Kaci this morning and then followed up with a workout and maintained great energy all day long! :-)
Here's what we had for dinner tonight, which Mike and I both really enjoyed....some more easy recipes at Everyday Paleo.
Sausage N' Cabbage "Noodles" with Fried Apples
I wanted something easy because we don't get home until late, so for this recipe, I actually used some fully cooked Chicken Apple Sausage that I got at Whole Foods, and I didn't put in caraway seeds since I don't know what those are. Other than that, I followed this easy recipe and made the Fried Apples as well, which were like a wonderful dessert! Altogether it took me about 20 minutes and only two pans! Easy cooking, easy clean up....gotta love that!

ReplyDeleteI have been following the paleo diet, for the most part, since last November. For the most part meaning there has been some reluctance on my part to get rid of the dairy in my coffee and to go a whole 30 days without any amount offending ingredients by 100%.
So how did day one go? I really need help with my coffee issue. I might just have to quit coffee all together... read: i had dairy...
Couple of other things; I have a page on facebook called "Food for Thought" where I share my paleo recipes, cooking tips and paleo menu ideas if anyone is interested.
My experience with the paleo diet so far has served me well (and CF xfit of course!) since I have lost 14lbs but I seem to have flatlined on the weight loss. I think I really need to get the rest of these offending ingredients out of my diet to try to find out what is going on!! ...fingers crossed it's not a cortisol problem!!

ReplyDeleteI struggled with the coffee thing too until we bought our Keurig at Costco. That's the thing that makes one cup at a time. It is super easy and we love it. Bed Bath and Beyond sells a bunch of different flavors for it and I found that French Vanilla and Hazelnut are just great without any cream. At Costco, I think it costs about $179 but that comes with a bunch of coffee, too and I figured we've probably already saved that much in fewer trips to Starbucks. Just a thought for you to consider.
Indeed, I have a Keurig and will need to start utilizing that but oh how i love the coffee shop!!

ReplyDeleteDay 1 is going good so far, I will try the cabbage chicken sausage meal tonight. I need to get a few things at the store, What kind of dressing do ya'll recommend, I'm headed to Whole foods so a brand name would be good to know.
ReplyDeleteI love Cindy's Kitchen brand found in the produce cooler section at either Whole Foods or Chucks. They have a great selection of dairy free options but you have to read the ingredients to stay away from soy. I just bought an avocado vinegarette but I haven't tried it yet.

ReplyDeleteBest bet for salad dressing is to make your own. Try a little olive oil, balsamic vinegar, sea salt and pepper, some lemon juice and a little garlic. Experiment with different ratios of olive oil to vinegar till you get a taste that you like. I mix these ingredients into a small tupperware dish, shake it up, taste then decide what to add more of until it gets to a taste that I like before I pour it on the salad.
So I made the Sausage Cabbage meal last night and also tried the cooked apples. The chicken apple sausage from Whole foods was great and to my surprise the Cabbage was OK as well. I will try making the dressing at home. I'm sure what I bought has soy in it. Back to the store today for more food. I'm going to try the burger from everyday paleo tonight for dinner.
ReplyDeleteGreat job on making it through day 1, Gregg! FYI - if you are needing some complex carbs for energy, definitely sweet potatoes are the way to go. I like to just microwave them and sprinkle a little cinnamon on them. Very tasty. Also, for an on the go snack, Lara Bars, which you can find by the protein bars at Whole Foods are good. Just don't get the peanut butter or chocolate kinds since they contain non Paleo foods. My favorites are coconut cream pie, apple pie, and carrot cake.
ReplyDeleteWay to go Gregg! I will figure out how to post on here and post some really yummy protein bars that I have made a few times. As you go through this you will find its kind a fun to try new recipes, and it's really not all that hard. My only suggestion would be to take a day on the weekend and make a meal plan out for the week so you aren't having to go to the store everyday unless you like too.
ReplyDeleteMary how are you doing? I was thinking if you can't do the coffee without cream maybe you could try hot tea. One of my favorites is Good Earth original (it's good hot or cold)
Have any of you bought the sprouted raw almonds that they have in bulk at Whole Foods? I bought some this weekend and they are fantastic not sure I will be able to go back to the just plain raw ones. They are a little more expensive but well worth the money.
Patti thanks for all the running this week! I am feeling great and really excited to see where our training takes us. I have to say eating a Paleo diet my body (muscles and joints) seem to recover much quicker then when I was eating more grains and dairy.
One last thought/idea for the night! What if we each buy one new vegetable(that we haven't used/or not very often) this week and come up with a recipe to share with each other using it. There seem to be a lot of vegetables that I don't buy just due to my lack of knowledge as to what to cook them with. Any takers? Thoughts?
